Add support for JSON structured log output

We use json logs for understanding output and structured json logs would make it easier to search them.

Describe the solution you'd like

Add an environment variable or configuration setting that allows switching output of logs to JSON

Describe alternatives you've considered

Debated writing parsing rules but goes against every other service we have in our clusters so decided against it.

My apologies for the delay in acknowledging your request over the holiday stretch. Wanted to confirm that we have seen this request. We are currently working through other priorities at the moment which preclude me from working on this right now. However, I do have the request in (tracking as SDK-1712) and we will let you know once any progress is made.

In the meantime, we are happy to accept PRs so if there is an urgency to this request, please don't hesitate to take a stab at it. And I'm available to answer any questions.
