[feature] Add metadata to the blobs stored by a sink

I think that it would be useful to be able to add meatadata to the blobs
Witht he file namer, we can sort or add metadata, is the form of the name of the file

I think it would be useful to add additional information in a more structured form

Happy to assist with a PR/discuss further if the maintainers consider this is a good idea
