Remove SpringFox and document the API using hand-crafted OpenAPI/Swagger-specs instead

An incompatibility between Spring-Boot 2.2.x andn the current SpringFix version currently blocks #2. We had lots of problems with SpringFox in the past and the generated models are still unsatisfactory.
