docker quick start

The quick start directions are some detail to get this functioning quickly. 

you mention editing the env files to change passwords, which env files ?  

If would be nice if this was in 2 files. the compose and the env.  Right now it's not very friendly to use and requires a good understanding of docker and docker compose to use. Kind of defeats the purpose I think.
