Archetype latest version pointing to snapshot versions

Using:

mvn archetype:generate \
-DarchetypeGroupId=io.kalix \
-DarchetypeArtifactId=kalix-maven-archetype \
-DarchetypeVersion=LATEST

Include the latest version but that can be a snapshot and thus the sample does not compile obv. see here

We most likely should not be publishing snapshots for the archetypes.
