Update screenshots

The screenshots are from a previous iteration of the UI that used GNOME's Adwaita GTK widgets.

The current UI is bare GTK and looks uglier. 😆 But we should probably update the screenshots so that people know what they're getting.

Adding a demo video might be interesting too.
