Revert the erroneous 1.0.1 version bump in Friday's Beta 2 release.

The tag has been updated within GitHub (https://github.com/liquidweb/woocommerce-order-tables/releases/tag/v1.0.0-beta.2), so this version is being reset accordingly.

Moving forward, version bumps will only happen with new releases.
