Doc: Add an introductory list to show available config options

This plugin has several different categories of config options, and therefore doesn't follow our usual docs format expected by users. The categories make sense and should remain as they are.  

We can assist users by providing a jump list (with links) so that they can see and understand the breadth of options available, and quickly navigate to the subset they want to see.
