Update AI docs for Lucee 7 release and multipart support

- Mark AI as stable (no longer experimental)
- Document multipart content support (images, PDFs)
- Add session serialization functions
- Reference RAG, serialization, and documentation docs
- Update function names (with/without Lucee prefix)
- Add comprehensive examples and use cases
