When I change the delimiters:
['[[', ']]'],

It no longer processes the variable. I am trying to avoid a conflict with shopify / braze liquid, for a lot of @{{example}} to protect values

Yes, in versions before 5.0 you had to do that configuration. Now with Maizzle 5.0, expressions that can't be parsed because of undefined references with be left alone, so you just write {{ example || 'test }} instead of @{{ example || 'test }}; no need to change config either 👍
