Fix CI pipeline Node version compatibility

- Updated Node.js versions from [16.x, 18.x, 20.x] to [20.x, 22.x]
- Resolves @react-native/metro-config@0.81.4 incompatibility
- Package requires Node >= 20.19.4
- All 107 tests still passing
