[BUG] Documentation should describe application.properties usage

The issue

Short description of the problem: Documentation should reflect full use of application.properties. A few properties are listed on the main page, but any DHF Gradle property will be read and acted on there.

At the same time, Gradle properties are not read; the existence of the -DdhfDir and -DdhfEnv switches suggests they will be. The documentation should be clear that that is not so.
