Create create_investor_profile function for portfolios_agent.py

To keep more clean as possible portfolios_agent write new function in utils/ to build investor profile.

Hi @matvix90 , I’d like to work on this refactor.

• Create a new build_investor_profile() function under utils/ to generate the investor profile
• Update portfolios_agent to use this utility for cleaner structure
• Add a small unit test for the new function
