old volume cleanup

Since moving to longhorn, we now have quite a few nfs volumes that aren't used anymore

• ensure no PVCs that aren't being used are flying around (also delete their data)
• remove unused/archived volumes and their data from the actual storage
• adjust/stop the backup cron, as only unimportant volumes should be nfs now (e.g. jellyfin media)
