830: Add usedDatabaseSize to stats, document and embeddings database metrics to index stats r=curquiza a=pratts

## What does this PR do?
- Adds `usedDatabaseSize` to stats
- Adds documents database metrics to stats
- Adds embbedings database metrics to stats
