docs: trim README and redirect to documentation site

- Reduce README from 2228 to 243 lines (~89% smaller)
- Keep essential quick start and feature overview
- Add prominent links to https://mgcrea.github.io/react-native-tailwind/
- Move detailed docs, API reference, and guides to documentation site
- Include 4 concise examples showing key features
