how to remove - before values

i don't want - before "0000:19:00.0"

The '-' is there because you are filtering the interfaces array, which returns an array of matching results. You can just select the first match by indexing the first one:

root@ubuntu:~# cat sriovnetworknodestates.yaml | yq  '.status.interfaces | map(select(.name == "ens3f0") | .pciAddress) | .[0]'
"0000:19:00.0"
