[deprecation warning] Replace dependency on libwebkit2gtk-4.0-37

This is a great app, but it's impossible to install it on anything based on Ubuntu 22.10 and up or Debian 13/testing and up. The Debian package has a dependency on libwebkit2gtk-4.0-37, but that is outdated on both Debian and Ubuntu. This should be replaceable with libwebkit2gtk-4.1-0, which is present since 22.04 and Debian 12 respectively.

When it also works, sure. No idea what the changes were between the versions, so it's not impossible any breaking changes were introduced.

Looks like it works without issues. Executing it from terminal only shows this warning:
[2025-01-07T11:37:39Z WARN journal_viewer::journal] Dropping the journal

But that doesn't look that relevant.

But looking at the package, it still only can be installed when libwebkit2gtk-4.0-37, already is present. If no changes were needed to make the package compatible with libwebkit2gtk-4.1-0, you need to write the dependency as:
Depends: systemd, libsoup2.4-1, libgtk-3-0, libwebkit2gtk-4.0-37 | libwebkit2gtk-4.1-0

That should say "use either or", but no idea if the order makes a difference. If it does, it may be preferable to prefer the 4.1 version, as going forward, that will be the only option anyway. So on systems that have both available, they should use 4.1 over 4.0.

Sorry haven't really had the time to look into this, but it looks like it required an upgrade to Tauri v2 to upgrade the dependency for libwebkit2gtk-4.1-0. This is done now.

Please check again and reopen the issue if needed
