Change backfill behaviour in matrix airflow DAG

• Check if catchup can be set at table / task level
• If not, consider splitting into two DAGs, or, just setting at single DAG level

Have updated the readme to highlight that API location data has no history.

Should the pipeline be amended to prevent the possibility of historical locations data being overwritten?
