I guess we can also just ignore all *.md files, I don't see why we'd ever want to run our whole CI when they change, no strong preference though, tell me if you have a stronger opinion on this

When we added automated tasks for generating files in the docs dir, we didn't update evergreen to match. This patch fixes this and adds some more files we can ignore to avoid running CI for no good reason
