Increase MAX_SYMBOL_LENGTH for coin and fungible_asset #1252

Is your feature request related to a problem? Please describe.
Currently one of our partners, Canopy, is blocked on MAX_SYMBOL_LENGTH of Assets due to one of their deployed (immutable) modules, which sometimes goes over this limit.

Proposing to increase the limit similar to Aptos:
