Hi, I just installed via Homebrew the app, works great, but there is not an Application shorcut through the App Showcase in Mac. Is there something I missed during the installation?

could you be a bit more specific what you are referring to with "App Showcase"? also any kind of installation related issues or behaviour is hombrew's responsibility.

Homebrew does not install an app bundle for mpv, it's that simple. There is a third party homebrew "cask" (= app bundle is installed) but it's deprecated and will subsequently be removed because it's not properly signed/notarized.
You could use something like that to create an app bundle for your homebrew install: https://github.com/9beach/mpv-app-bundle But note that it wants you to curl | bash which is rarely a good idea if you don't know what you are doing. Also not sure how "good" this bundle is compared to the one built by mpv because the one in the linked repo is a different one (as in: don't know if it registers for the same file types, app icon, ...).
Otherwise, download a build or building yourself are the easiest solutions, I guess.
