Add additional fields to created user

Is there a way to insert additional fields into the user table when a user signs up?

I can sign up through Google and it inserts the user, session, account records etc, but I need to add some additional fields into other columns such as user type from a select field. A user can be a buyer or a seller so this needs to be in the user table when they sign up.
