Update documentation for BackendTLSPolicy #3121

What would you like to be added:
Provide documentation for secret support for BackendTLSPolicy
Why this is needed:
Once the PR supporting secrets in BackendTLSPolicy is merged, we need our documentation needs to reflect the change
Mention that ca.crt is the required field for the CA cert in the Secret (as provisioned by cert-manager)
Additional context
- Update Gateway API compatibility document and examples of BackendTLSPolicy for supporting secrets
