"latest" tag not updated

Describe the bug
While 1.5.1 has been pushed 3 months ago, the image tagged "latest" is still 1.5.0

To reproduce
Confirmed by "Digest" f261b7bcfe50 in DockerHub, also by running:

docker exec -it nginx-exporter nginx-prometheus-exporter --version
nginx_exporter, version 1.5.0 (branch: HEAD, revision: b14979c9f3634dcd5a2b158874e713beb3aca3d7)
  build user:       goreleaser
  build date:       2025-10-07T15:37:41Z
  go version:       go1.25.1
  platform:         linux/arm64
  tags:             unknown

Expected behavior
CI release process of a new version should update the "latest" tag
