[Feature Request] Split WiVrn into stable and nightly channels

As the title says, I feel like it would be beneficial to split the package for wivrn into 2 packages, one that retains the current system of using git commits to be on the nightly channel, and one that only pulls the source code for the versioned releases, that way if someone only wants to use the version that would be readily accessible from places like the horizon (quest) store without having to bother with Meta's developer system, which, at least in my experience, has been fairly finnickey at getting the headset to allow me to properly activate ADB in order to install the APK, and the only other option is to use an even more finnickey workaround to get a traditional android UI opened up inside the headset to expose the ability to install apks that way.

One way to achieve this would be to filter the attributes in the overlay.

The way I was suggesting was moreso to switch it to being 2 separate packages in the repository. One labeled just wivrn (the stable branch), and wivrn-nightly (the git branch). That way it's less of a hassle to have to remember to alter the overlay to switch between versions of the package

I also like this idea. I updated my nix locks and then the server/app versions had diverged and the app refused to connect because the server version was different, and I had to remove the overlay to get it working again. I mainly use this flake because nixpkgs sometimes takes a while to get the new version of wivrn updated, and switching each time is quite annoying.
