Field map fault Microsoft.TeamFoundation.WorkItemTracking.Client.FieldDefinitionNotExistException

When running a migration from one Azure DevOps Server to another. I am seeing the following errors repeatedly on our User Stories...

I've noticed that the migrated User Stories also have a weird entry in their Description field where it looks like it's recreating the Acceptance Criteria but as a text entry in the Description field.

Can you remove all of the custom field maps and run again?

I did that and it ran just fine. So it sounds like the default configuration I was running tries to look for a bunch of field maps that don't exist in normal Azure DevOps?

As on the other post, the reference config is not designed to be run!
