Ease data requirement multicore calculations

Currently using rc_sim_multi to perform multicore calculations requires user provided data on all rotsee inputs, whereas rc_sim only requires soil properties and a simulation period. Rc_sim_multi should function in a similar manner. Add checks at the beginning of the script and create empty data tables if non are provided to ensure the script keeps running
