samples: bluetooth: Set CONFIG_BT_SMP_SC_PAIR_ONLY=n when needed

LE legacy pairing is no longer enabled by default. A few more samples that
use it, need to disable the BT_SMP_SC_PAIR_ONLY Kconfig option.
