Add better error for unmatched delimiter

Currently, lexing a source code with unmatched delimiters, such as `"unmatched`, results in an extremely unhelpful error. Using the [callback](https://logos.maciej.codes/callbacks.html) feature of Logos it should be possible to craft something more helpful.
