License information needs some modifcations

Project has two license files:

• https://github.com/o3de/PlanetSurvivalGame/blob/main/LICENSE_APACHE2.TXT
• https://github.com/o3de/PlanetSurvivalGame/blob/main/LICENSE_MIT.TXT

but MIT license is not mentioned in main README so unclear if we are licensing under both MIT and Apache 2.0 terms.

Main README where it discusses licensing has formatting issues which make it hard to read. Consider not using Markdown's table format here to improve legibility
