`self.env` string completion does not trigger correctly without the closing quotes and brackets

You're right, that's actually an old limitation from our parser that was not able to parse invalid python, and so we were unable to complete this code. Now that we moved to the Ruff parser we can, but we did not update this behaviour, as it can sometimes be a little bit difficult to guess what the next statement will be.
But it's doable, and it's actually in our todolist. You'll see that this limitation is there too in domains, where we are providing a snippet so the structure of your domain is complete to let OdooLS help you complete the domain fields, but we'll be able to improve that too in the future
