Add support for interpretation codes in Observation interpretation

For this issue, support needs to be added for handling and displaying FHIR Observation interpretation codes properly. Currently, the interpretation field is either not fully processed or not mapped according to the standard value set. The goal is to correctly parse these codes and present them in a meaningful way in the UI.

Steps to implement interpretation support:

Parse the Observation.interpretation field (CodeableConcept) from the FHIR response
Extract standard codes like H, L, N, A, HH, LL
Map these codes to readable labels (e.g., High, Low, Normal, Abnormal, Critical High, Critical Low)
Ensure support for multiple interpretation values (as FHIR allows multiple entries)

Suggested UI Design (for better usability:

To make interpretation easier for users, a badge-based or color-coded UI can be used alongside observation values. This will help users quickly understand whether a result is normal, abnormal, or critical without reading detailed text.

UI Implementation Steps:
Display interpretation next to the observation value

Use color-coded badges:

Green → Normal

Yellow → Abnormal

Red → Critical

Show label text inside the badge (e.g., “High”, “Low”)
Handle multiple interpretations by showing multiple badges if needed
Ensure consistency across all observation display components
This approach ensures both FHIR compliance and better user experience, making clinical data easier to interpret at a glance.
