chore: use MIT license only

Changed from dual MIT/Apache-2.0 to MIT only:
- Updated workspace license in Cargo.toml
- Updated README license section
- Added LICENSE file with MIT text

Simplifies licensing while remaining permissive and
compatible with the Rust ecosystem.
