statedatabase switch to provleveldb and ustore

After the docker images are made and network is deployed with Fabric# peer and orderer, how to change statedatabase to provleveldb or ustore? There is a configuration file that contanins "STATEDATABASE", but how to modify it and apply changes? Default statedabase is leveldb, right?
