Add support for Opik for LLM Tracing

Hi! I'm a huge fan of open-webui and use it extensively. I'm looking for a way to track traces (and then later evaluations) but I see there's only support for Langfuse. I suggest to add support for Opik as well. I've switched from Langfuse to Opik a few months ago and I find Opik to be much stabler and personally feel like the UI is nicer.

Opik is fully open source and runs locally. I already have it running alongside open-webui. Looking at 143cf7e it should be trivial to add Opik support. I'm happy to try an open a PR myself too.

Hey @Lothiraldan - I am using this, traces show up fine and the conversation thread shows UNTIL you attach a document to the chat, then all future messages happily show up in traces, but the whole conversation disappears from the threads view.

This means any Online Evaluations you've got configured for Threads won't apply to that conversation as it doesn't exist as a thread any longer.
