How to generate .srt file in english, when the mp3 is in a different language?

Use these command line options
--task translate --output_format srt

whisper --help will display all the options available.

I tried it, didn't work. It's generating subtitles in the language of the audio

If you are using the turbo model you will have problems trying to translate. Try the medium model, as one example, using
--model medium
