Should we store a country data anywhere

It will be useful in various microservices to filter down to certain countries. For example in the dashboard, select from locations in the NL.

This could be metadata in the geometry table, but thought it might be worth a separate column.

This is already natively handled. If you mean "only give me locations within this country" then simply having a geometry without an attached source allows this filtering. All we'd need to do is insert the geometry for the netherlands, for instance, then it could be used in the GetLocations enclosing_location_uuid filter.
