Update to new ocf-data-sampler + pvnet

Current we are pinned on a lower version, but we be good to use new ocf-data-sampler.
This means we wont have to create samples, we can just stream samples when training the model

Just to add context: PR #110 introduces a small compatibility fix so
gfs_dataset.py doesn’t crash while open-data-pvnet is still pinned to
older ocf-data-sampler versions.

Once the upgrade in this issue is complete, that workaround may no longer
be needed.

If there’s a specific subtask or validation needed during the upgrade,
I’m happy to help.
