Task: Unify repository settings #132

Understand the Task
Right now, our repository settings are not unified across all repos in our org. That can lead to different behaviour for branch protection, PR reviews checks, etc.
Let's invest some time to think about how we can solve that properly.

- after agreement, update this issue accordingly to define all tasks
