Task: Migrate Releasechannel ocm component-descriptor from `v3alpha1` to `v2`

Understand the Task

Description
We need to migrate the current setup of the releasechannel to produce component-descriptor in schema v2 not in v3alpha1 as OCM discontinued the version v3alpha1. This is needed to ensure compatibility in further development.

This needs to be changed in:

• releasechannel-bot: Produces currently in schema v3alpha1, needs to produce v2
• releasechannel repo: Makefile in build step to create the ocm component from schema v2 not v3alpha1

Done Criteria

• Releasechannel produces a v2 component-descriptor in the build step
• Code has been reviewed by other team members
• Internal technical Documentation created/updated
• New / changed code is documented
• Unit Tests created for new code or existing Unit Tests updated
• Integration Test Suite updated
• Enduser Documentation updated (if applicable)
• Successful demonstration in Review
