[Spike] Upgrade Petstore-Provider to V2

Understand the Task

Description
We have the minimal crossplane provider petstore-provider.
We can bring this to v2 as a little exercise to learn:

• if v2 provider runs on v1 with the resources
• how we best proide the new .m. namespace-scoped MR

Hopefully, this is just a one hour exercise and we will learn from it for our main providers.
Lets do it in a fork to not mess with our current guides.

Completed this little spike and added the changes in a fork.

• Upgraded dependencies, fixed issues
• Added .m. resource
• POSTPONED: nicely handle the reconciliation of old and new resource without duplicating code

Follow-up:

• enable the .m. resource to reconcile (final step of the upgrade)
