[Task] Upgrade Crossplane Provider Petstore to V2

Description

In order to test out implications of upgrading Crossplane to V2, we want to try out the general process by using our demo Provider Petstore.

This will give us process insights and an estimation on the effort and migration path for each provider.

Acceptance

•  Forked version of Petstore provider with dependency of Crossplane runtime set to V2
