Change number of Swift replicas in documentation

Examples in the documentation should meet production requirements, thus
increasing the number of replicas in the Swift examples to the minimum
to guarantee safe workloads.

Replica settings in the tests are unchanged because this would need
additional disks and/or nodes to test with.
