Update Docker image to trixie

Currently the scraper uses Debian bookworm because this is the release provided by Redis on Docker Hub.

Looks like Redis is anyway already testing on trixie, so it looks like it should be ok to use the binary from bookworm image and use it in a trixie image. To be tested and confirmed obviously. Otherwise we will have to wait for Redis to move their images to trixie.
