For 1.20.1 forge users, Ore Tree (Reborn) dynamic tree addon can be made, trunks can be harvested and in order to collect ores such as diamond, coal or iron, u must smelt the trunks.
For 1.21.1 neoforge users, Minecraft stone blocks can be used for trunk appearance and u can get ores by mining them
