This proposition mostly focuses on a very small GUI change.
When choosing the open a file with the Open With -> Other Application ... option the user has to manually click on the menu where the apps are and then start typing for it to start searching for specific applications since by default it puts the user's cursor in the command text field.
I suggest that the search field for applications is always present instead of appearing as a pop up once the user starts typing and is the one to be first selected for typing when the menu is opened. Of course some way to distinguish the 2 fields needs to be done so that the user doesn't confuse the 2.
