Migrate to Docker Compose V2

Docker Compose V2 is out there, so we might consider migrating to it.

Unfortunately, my first tests locally weren't quite promising. I found it slower, and I got a weird behavior with the docker compose exec command (it exits early). However, V1 eventually will be abandoned, so we might need to migrate at some point.
