Allow for disabling markdown parsing or providing finer-grained control

We don't expose allow react-markdown controls: https://github.com/remarkjs/react-markdown?tab=readme-ov-file#options. We should allow users control over the block/allow list functions, etc. We should also allow for disabling markdown parsing so there can be text-only messages.
