Remove showdown dependency

Since showdown hasn't been updated in several years we should replace it with a more maintained markdown <> HTML converter, or remove it if that functionality is no longer needed in the package.

Progress so far:

• My initial attempt at this issue was to remove the dependency and the markdown processing components of the repo that directly use it, as consumers did not appear to be using those components. Unfortunately this was not successful as other components of the repo which are used by consumers do use the markdown processing components.

• My next attempt was to replace showdown with the react-markdown package, which is used in our chatbot for converting markdown into React components. Unfortunately this was also not successful as a multitude of issues were encountered with supporting react-markdown in the repo, specifically related to issues with our version of jest and related packages here.

• My current attempt is replacing showdown with marked, with which I've now re-enabled general purpose markdown processing, but I'm still working on adding support for our custom markdown processor extensions which were tailored specifically for showdown.
